Meatless Cauliettes® “Meatballs”

  • 1
    (14 oz.) package Mann’s Cauliflower Cauliettes®, microwaved uncovered, for 7 minutes
  • 1/2 Cup
    diced onion, sauteed in 2 tsp. olive oil
  • 3 Cups
    (8 oz.) chopped mushrooms, close to crumbles in size, sauteed in 1 Tbsp. olive oil
  • 2 Tablespoons
    chopped parsley
  • 1/4 Teaspoon
    garlic powder
  • 2 Tablespoons
    chopped Kalamata Greek olives
  • 1/2 Cup
    grated Parmesan cheese
  • 1/2 Cup
    Italian seasoned bread crumbs
  • 1
    egg, beaten
  • Optional add-ins
    1 Tbsp. minced sun-dried tomatoes and 1 Tbsp. chopped walnuts
  • Vegetable oil, as needed for frying


  1. Sauté onions over medium high heat until soft and translucent, then put in a mixing bowl. Sauté mushrooms over high heat for about 3 minutes until browned, then add to the onions along with the cooked Cauliettes® and all remaining ingredients. Mix well, then using your hands moistened with water, shape into 8 large or 16 small balls. In a frying pan, pre-heat a thin layer of oil over medium high heat and fry the balls on all sides, about 1- 2 minutes per side until light brown. May be served with marinara sauce.
