Broccoli Clovers Greek Salad
Prep Time 10 minutes Cook Time: 20 minutes Serves: 4-6
Ingredients
¼ cup olive oil
2 garlic cloves, minced
1 teaspoon Dijon mustard
¼ teaspoon fresh ground black pepper
¼ cup fresh lemon juice
1 tablespoon chopped fresh basil leaves
1 (14 ounces) package Culinary Cuts Broccoli Clovers
1 cup sliced red onion
1 pint grape tomatoes, halved or quartered
½ pound feta cheese, crumbled
¼ cup Kalamata olives, pitted and sliced
Directions
In a large bowl, whisk together olive oil, garlic, mustard, pepper and lemon juice. Stir in basil.
Add Broccoli Clovers, onions and tomatoes and toss. Marinate for 20 to 30 minutes. Add feta and olives and serve.
